Who knew how much research would be involved in a story like this? Finding enough ingredients to create a lot of variety--and then mapping out the salads--was a lot more work than I anticipated!
I hope it'll make people hungry for good salad, though. And now I know why I occasionally encounter something in a restaurant salad that tastes like beets, but isn't a beet. That chard is sneaky sneaky. :O
